During the pandemic, you may find grocery shopping to be a strategic effort. While bags of rice and pasta may be in low supply, try the produce section for your carb quota. Besides the obvious benefit of fresh versus processed, sweet potatoes boast a ton of good-for-you qualities. They’re loaded with fiber, minerals and vitamins, plus they’re low on the glycemic level, which won’t cause blood sugar to spike. The best part? Sweet potatoes are a root veggie, which means they have a long shelf life. So, buy now, and then stash away for 3 to 5 weeks.
INGREDIENTS
- 1 large or 3 small sweet potatoes, peeled
- 1 cup shredded mozzarella cheese
- 1/3 cup of flour (white or whole wheat)
- 1 large egg
- 1/4 tsp. cayenne pepper
- 1 tbsp. garlic powder
- 1/4 cup chopped green onion (optional)
- Olive oil
- Salt and pepper, to taste
DIRECTIONS
- Preheat oven to 400°F and line a cookie sheet with parchment paper. Grate sweet potatoes into a large bowl and add cheese, flour, egg, cayenne pepper and garlic powder (plus onions, if using). Mix thoroughly. Scoop out 1/4 cup of the mixture and shape into a patty. Drizzle with olive oil and add salt and pepper. Bake for 30 minutes. Top with Greek yogurt, sour cream or spicy mayo. Makes about 12 fritters.
